If you haven’t noticed yet, I love a good treat. I was laughing one day as I proofread a post about gift-giving and noticed that once again, I had mentioned how everyone loves a batch of homemade cookies as a gift. Simple, fast, frugal, delicious. Not exactly nutritious, but maybe you’ll forgive me that?
These chocolate chip cookies have been my go-to cookie recipe for a while now. For years, I had a magical chocolate chip cookie recipe that I used (named so because they were soooo good and were sent in many care boxes) but those cookies used 2 sticks of butter, and only made 2 dozen cookies. Since there are only two cookie eaters in this house at the moment, I realized I needed to tweak my beloved recipe to cut down on the butter and to make a smaller batch of cookies.
I love that these only use 4 TBS of butter (especially since butter prices in our area are high) and one egg. I’ve substituted coconut oil for the butter which does make for a nice cookie, but I’d recommend only using 3 TBS since coconut oil goes a long way. I’ve also substituted 1/8 tsp of peppermint extract for the the vanilla at times for a peppermint chocolate chip cookie. So good. Well, I hope you enjoy this recipe as much as we have. Best Mini-Batch Chocolate Chip Cookies
4 TBS butter
1/3 cup sugar
1/4 cup brown sugar
1 egg
1/4 tsp vanilla
3/4 cup flour
3/4 cup oats (I use old-fashioned)
1/4 tsp salt
1/4 tsp baking soda
1/8-1/4 tsp cinnamon (optional)
1/4 cup semi-sweet chocolate chips
Preheat oven to 350 degrees.
In a medium bowl, cream the butter with the sugars. Add egg and vanilla and beat until smooth. In a separate, small bowl, mix the flour, baking soda, salt, cinnamon, and oats together. Pour into the sugar mixture and mix until combined. Add the chocolate chips and mix.
Drop teaspoonfuls onto a cookie sheet and bake for 10-12 minutes.
Makes one dozen (depending on if you eat cookie dough or not. Ahem.)

🙂 You can add just a touch of flour instead of the oats. You don’t need the oats–they just add extra texture. 🙂 Hope that helps!
